Breakfast Rice Quinoa Pudding is a secretly healthy breakfast that tastes like dessert! Made with whole gluten free grains, coconut cream, monk fruit syrup and of course some added good quality protein.

Ingredients

2 Cups of leftover trio mix **

1 Cup of macadamia nut milk

1/2 Cup coconut cream

3 Tbsp coconut yoghurt *

2 Servings of Nuzest Smooth Vanilla Clean Lean Protein or Nuzest Vanilla Caramel Kids Good Stuff

1 Tsp vanilla extract

1/3 Tsp ginger spice

1/3 Tsp cinnamon

3 Tbsp Monk fruit syrup

2 Dehydrated figs finely chopped

1 Ripe banana sliced

1/3 Cup chopped macadamia nuts

Look no further, this simple easy to make overnight vanilla spiced pudding can outsmart those food cravings, plus it gives you a wholesome breakfast, less the hassle.

Breakfast Rice Quinoa Pudding is a secretly healthy breakfast that tastes like dessert! Made with whole gluten free grains, coconut cream, monk fruit syrup and of course some added good quality protein.

I made this for a client recently, who was fed up with oats. So, instead of using oats, we cooked a batch of my **trio mix (this consists of quinoa, brown rice, buckwheat groats). Once a large batch was cooked, we divide it into 6 portions, keeping 3 portions for savoury dinners and lunch meals, the other 3 portions for overnight breakfast jars.


Method

Mix all the above ingredients together in a large bowl apart from the coconut yoghurt and fresh banana.


Once the mixture is mixed, take your 3 glass jars and fill the jars 1/3 with the rice mix, then layer a teaspoon of coconut yoghurt, banana slices, optional some macadamia nuts, then add  another layer of the rice mixture, finally a little more coconut yoghurt, some chopped figs, close the jar and keep overnight in the fridge, you can keep this for three mornings. 


Therefore, one practice of making this will give you three to four breakfasts depending on your glass jars etc.
