STRAWBERRY VANILLA ALMOND FLOUR COOKIES

These cookies are gluten-free, low carb and a perfect dessert for a ketogenic diet.

Ingredients

2 Cups almond flour

1/2 Tsp baking powder

1/2 Cup dehydrated chopped strawberries 

1 Large egg

1 Tsp vanilla extract

1/3 cup melted coconut oil

1 Tbsp peanut butter

2 Scoops of Nuzest Wild Strawberry Kids Good Stuff

3 Tbsp monk fruit syrup

These cookies are gluten-free, low carb and a perfect dessert for a ketogenic diet.


Method

Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper and set aside.

In a large mixing bowl, add your almond flour and baking powder and mix well. Add your melted coconut oil, monk fruit syrup, egg and vanilla extract, and mix until combined. Then follow with the rest of the ingredients. Using a rubber spatula, fold through your strawberry chips.



Form 12 bite size balls, place them on your lined sheet and lightly press them down. Bake for 15-20min depending on how thick they are. Bake until the edges are golden brown.
