VEGAN EGGNOG SMOOTHIE

This is so easy to make! We call it the one blender wonder of course.  Easy to make, healthy and all naturally-sweetened vegan eggnog, perfect for the holidays especially if you are celebrating in a hot climate.

Ingredients

Eggnog:

  • 2.5 Cups ice cold almond milk
  • 1/3 Cup pre-soaked almonds
  • 1 Can (400ml) ice cold coconut cream (kept in the fridge overnight)
  • 4 Scoops Nuzest Smooth Vanilla Clean Lean Protein
  • 4 Tbsp Monk fruit syrup
  • 3 Large pre-soaked medjool dates *optional
  • 2 Tbsp runny pecan nut butter or cashew nut butter
  • 1/2 Tsp ground cinnamon (a touch more if you like)
  • 1/4 Tsp ground nutmeg (a touch more if you like)


Toppings:

  • Sprinkle with cinnamon.

Eggnog is always a winner, hence why we made this easy version with a twist by making it into a smoothie like form with that added eggnog spice.

Method

To a high speed blender, add your milk followed by the coconut cream and followed by the rest of the ingredients. Blend the entire mixture until a smooth thick consistency is achieved. 


Pour the mixture into your glass jars, for the toppings add some extra cinnamon spice.
