COCONUT VANILLA PISTACHIO KETO BITES

These no bake keto coconut bites are made with just a few ingredients. Using a combo of both coconut flour and almond flour, these low carb coconut bites are the bomb!

Ingredients

For the filling:

  • 1/2 Cup blanched almond flour
  • 1/2 Cup coconut flour
  • 2.5 Cups unsweetened desiccated coconut 
  • 1 Scoop Nuzest Smooth Vanilla Clean Lean Protein
  • 3/4 Cups runny monk fruit syrup (keto friendly)
  • 2/4 Cups nut milk
  • 1 Tbsp coconut oil (melted)
  • 1 Tsp vanilla extract


For the “white chocolate” coating:

  • 1/2 Cup coconut milk powder
  • 1/2 Cup cacao butter (melted)
  • 1/2 Tsp pistachio extract
  • 2 Tbsp monk fruit powder (fine powder version)
  • 1 Tbsp coconut oil melted
  • 1 Tbsp cashew nut butter (smooth and runny)

These no bake keto coconut bites are made with just a few ingredients. Using a combo of both coconut flour and almond flour, these low carb coconut bites are the bomb!


Method

Start by adding all the ingredients for the coconut filling to your high speed blender, or you can use a large mixing bowl. Once evenly blended, start by shaping out your coconut bites. You can even roll little bite size balls, these are easier and quicker of course. Once done, place the mixture in the freezer for up to 45 min to an hour to set before you coat them in the “white chocolate” mixture.


After 40min of the coconut bites being in the freezer you can start making the chocolate coating. For the chocolate coating, you just need to add all the ingredients together and stir well until a creamy consistency. Coat your coconut bites with the white chocolate filling, place them in the freezer for 15min to set. Enjoy.


You can store them in the freezer for up to 3 weeks in a airtight container, allow to thaw for 5min before once you removed them from the freezer.


Notes: If the coconut filling batter is too crumbly, add extra nut milk until a slightly sticky texture remains.
