This truly delicious Strawberry Vanilla Quinoa Chia Porridge is perfect for a make-ahead breakfast treat.

Ingredients

1.5 Cup macadamia nut milk (unsweetened)

4 Tbsp chia seeds

1 Cup cooked quinoa

4 Tbsp coconut yogurt or other plant based yoghurt

2 Tbsp monk fruit syrup

1/2 Tsp vanilla paste (or 1 tsp vanilla extract)

This truly delicious Strawberry Vanilla Quinoa Chia Porridge is perfect for a make-ahead breakfast treat.


Method

To a large bowl add all the ingredients and mix well until evenly mixed, once mixed. Cover the large bowl and place in the fridge overnight to set.


The next morning scoop your chia porridge mixture into your glass jars, serve with chopped strawberries, coconut yoghurt and coconut cream, topping it off with some crunchy coconut crunch.
