APPLE VANILLA SPICE CHIA PUDDING

This creamy chia seed pudding recipe tastes like a creamsicle! You're going to love this healthy gluten-free treat—enjoy as a snack, dessert or breakfast.

Ingredients

Chia seed layer:


Apple spice layer:

  • Chopped apple dusted with cinnamon spice (pop it in the air fryer for 8min to give it more flavour) air fry at 160 degrees


Dark chocolate layer:

  • 1/2 Cup hazelnut butter (must be runny)
  • 2 Tbsp cacao powder
  • 1/3 Cup monk fruit syrup
  • 2 Tbsp melted coconut oil

Method

Start by placing the chopped spice apple pieces into your air fryier. Thereafter start adding all the ingredients for the chia pudding together and set aside. In a separate bowl, mix all the ingredients for the dark chocolate layer, if the chocolate layer is too firm just add more melted coconut oil.


Allow the chopped apple spice to cool off once you have remove it from the air fryer.


Start by layering your glass jars, I sprinkled some puffed quinoa for the base layer, followed by the Halloween inspired chocolate chews (made from the same ingredients as the dark chocolate layer mix). 


For the next layer, add a dollop of coconut yoghurt followed by the dark chocolate layer, sprinkle some of your spiced baked apple pieces. From there you will add your chia pudding mixture, this will be the last layer. For the final toppings you can drizzle some runny peanut butter, along with a little leftover spiced apple pieces and some puffed quinoa.


Notes: If the chia mixture is too thick and you want it more runny, you can add a little more nut milk.
