This is the best chocolate cookies recipe ever.

In a bowl whisk together the flour, salt and baking powder. Set aside.

In the bowl of your food processor, add the rest of the ingredients and mix until smooth, I would recommend mixing it for at least 3 minutes.

Add the flour mixture in batches about ⅓ at a time and mix. Transfer the dough to a big piece of plastic wrap and gently knead it until it forms a ball. Wrap the cookie dough and refrigerate for at least an hour.

Preheat  your oven to 350°F. Line a couple baking sheets with parchment paper.

Place the cookies onto the prepared baking sheet once you have rolled them into balls and bake for about 15 minutes, just until the outer layer is firm and the center still slightly soft.

It is optional to dust them with monk fruit icing sugar prior to baking or after. I wanted to create a bit of a shiny texture to the outer coating.

Transfer to a rack and cool. If you wish you can sprinkle them with icing sugar.

I also recommend using monk fruit sugar, since monk fruit sugar does not spike the blood sugar levels.
