TOASTED HAZELNUT PROTEIN COOKIES
Recipe by Charissa & Co.
These coconut flour hazelnut butter cookies are thick, chewy, and take less than 15 minutes to make!
Made with simple ingredients, there are no sugar or grains needed! Plus they only have around 4 grams net carbs per serving.
1 Cup granulated monk fruit sugar
4 Tbsp coconut flour
1/2 Tsp baking soda
1 Cup hazelnut butter
1 Tbsp coconut oil
1 Large egg
Preheat the oven to 180C/350F. Start by lining a large baking tray with parchment paper and set aside.
Using a large mixing bowl, add your dry ingredients and mix well. Add your hazelnut butter, egg, coconut oil and mix until combined.
Use your hands to form 12 balls of dough and place them on the lined baking tray.
Allow to gently press down on each cookie and cross the sides with a fork. Sprinkle it with some toasted hazelnuts.
Allow to bake the cookies for 12 minutes, or until they just begin to go brown around the sides.
Once baked, remove the cookies from the oven and let cool on the tray completely.
