STRAWBERRIES & CREAM COCONUT CHEESECAKE POCKETS

These Low carb, Low sugar, gluten-free cheesecake pockets are the ultimate Valentines dessert.

Ingredients

Filling:

  • 2 Sheets of coconut cinnamon wraps⁠
  • 1/2 Cup pre-soaked cashew⁠
  • 1 Whole lemon juiced⁠
  • 2 Servings of Nuzest Wild Strawberry Clean Lean Protein ⁠
  • 2 Tbsp Monk fruit syrup⁠
  • 1/4 Tsp Lions Mane @teelixir 
  • 1/3 Cup Tahini paste (hulled)⁠
  • 2 Fresh strawberries (purée)
  • 1 Tbsp coconut yoghurt


Drizzle:

  • 1/2 Cup melted white choc chips @noshu
  • 1 Tsp strawberry extract 
  • 1/3 Tsp strawberry powder 
  • 1 Tbsp coconut oil

Fuss free and so easy to make! Plus not only are the guilt free but they have added protein and they are free from processed ingredients like refined sugars, trans fats or no preservatives!

Method

Pre soaking your cashews for 6-8 hours. Rinse and strain.⁠ blend all the ingredients for the filling until smooth. Fill your coconut pockets with the cashew filling. 

Allow to freeze for 2 hours. After 2 hours, drizzle some white strawberry chocolate on top.

Pop them back in the freezer for another 30min before serving.

Keep in the freezer for up to 2 weeks.
