These coconut flour ginger sesame inspired cookies are easy to make, chewy, and kick a spice with the added ginger. All you need is a few simple ingredients.

Ingredients

1.5 Cups coconut flour

2 Cups of tahini (sesame paste) hulled tahini 

2/3 Cups monk fruit syrup 

2 Servings Nuzest Smooth Vanilla Clean Lean Protein or Nuzest Vanilla Caramel Kids Good stuff

1/2 Tsp Ginger powder

2 Tbsp flaxseed meal

1/2 Tsp lions mane powder 

1 Tbsp freshly grated ginger

1 Tsp baking soda

These coconut flour ginger sesame inspired cookies are easy to make, chewy, and kick a spice with the added ginger. All you need is a few simple ingredients.


Method

Preheat the oven to 180C/350F. Followed by lining a large plate or tray with parchment paper and set aside.

In a large mixing bowl, sift your coconut flour ensuring no clumps remain.

Add your tahini, syrup and mix very well, ensuring the mixture is fully combined. If the batter is too thick, add some extra liquid (milk). If the batter is too thin, add some extra coconut flour. Combine all the ingredients and mix well. It needs to be a sticky dough consistency and not too runny and wet.

Lightly wet your hands and form 24 small balls or 12 large ones and place on the lined plate. Press each ball into a cookie shape.

Bake for 15min-20min. Check the cookies after 12min to see how they are baking. Depending on the size and thickness, you need to asses how much more time they need.

Of course drizzle or dunk some sugar free chocolate LOVE on these beauties! I use noshu foods dark chocolate!
