These gluten free black forest pancakes are layered with sweet breakfast flavour. Super chocolaty pancakes paired with cherries, chia seeds and yoghurt.

Ingredients

1 banana (mashed)

2 eggs

1 tbsp cacao powder

1 tbsp oats

1/4 tsp baking powder

1 cup frozen cherries

1 tbsp chia seeds

1 tbsp lemon juice

2 tbsp sweetener of choice

1 cup yoghurt

Method

Black Forest Protein Pancakes:

1. Mix the banana, eggs, cocoa powder, oats and baking powder. Cook in oil on a medium-high temperature pan or griddle, keeping the pancakes small as they can be delicate.

2. To make the cherry chia jam, combine the cherries, chia seeds and lemon juice. Sweeten to taste.

3. Layer the pancakes with yogurt and the cherry jam to create a beautiful stack as pictured.
