Busting those sweet cravings for those not so healthy desserts does not have to be complicated. Overcoming a sweet tooth is something many of us struggle with, especially with sugar being highly addictive and we’re constantly surrounded by hyper palatable foods.

Ingredients

Cookie base:

  • 1 Cup macadamia nut butter
  • 1/2 Cup coconut flour
  • 3/4 Cups of Monk fruit sugar (granulated)
  • 1 Tbsp flaxseed meal
  • 1 Large egg
  • 1 Tsp cinnamon

Busting those sweet cravings for those not so healthy desserts does not have to be complicated. Overcoming a sweet tooth is something many of us struggle with, especially with sugar being highly addictive and we’re constantly surrounded by hyper palatable foods.

Key is to start simple, finding small ways to outsmart those unhealthy foods. Some smart steps are by swapping out refined sugars with “better” alternatives. Adding spices like cinnamon. Cinnamon is a great sweetener and it has many benefits. Cinnamon is known to reduce sugar cravings by controlling blood glucose levels.

Adding protein to your healthier dessert swap is another great tool for stimulating those cravings without wanting more.


Method

Start by preheating the oven to 350 degrees Fahrenheit and line a baking tray with parchment paper or a cookie sheet.


In a large mixing bowl, combine all your cookie base ingredients and mix until well combined. 

Using a cookie scoop form small balls on the cookie sheet, spread them 3-4 inches apart. Press each ball into a cookie shape and press down with a fork. Bake for 8-10 minutes, or until cookies are light golden brown.

Allow to cool and set aside whilst making your bounty bites. For the bounty bites you would need to combine the desiccated coconut, protein powder and condensed milk. Once combined roll into small balls pressing them down into a little cookie shape. Pop them in the freezer for 1 hour hour, once an hour has passed remove from the freezer and cover with the dark chocolate, once covered allow the coating to set as you place it back into the freezer for another 20min while making the ice-cream layer.

For the nice-cream layer, you need to blend all the ingredients together until smooth. Set aside. Taking a non stick square tray 8 x 8 inches. Start by placing your baked (cooled) cookies closely tougher as the base, once done, pour the nice-cream mix on top of the cookie layer. Sprinkle some coconut slices and drop in a few of your bounty-bite cookies you made (splay them out randomly).

Place the tray in the freezer for 2.5 hours. After remove from freezer and cut the ice-cream into square shapes. Keep in the freezer for up to 2 weeks. Allow to thaw for 5-8min before serving.

Option drizzle with warm dark chocolate.
