Ice Cendol (Iced Indonesian Dessert)

Ingredients

100g Rice flour

50g Tapioca flour

1.5 Tbsp sugar of choice

1/4 tsp salt

500ml Nuzest mixture (blend 1 package of Good Green Stuff with 500ml water and 3 pcs pandan leaves, strained)

Ice Cendol is an Indonesian drink made from rice flour served with coconut milk, coconut palm sugar and ice cubes or shaved ice.

To get the bright green color of cendol I rely on Good Green Stuff.

It’s gluten free, dairy free, refined sugar free and vegan.

Method

Stir together all the chendol ingredients (rice flour, tapioca flour, Sugar, salt and Nuzest mixture in the pot.

 

simmer this mixture on a low heat to allow it to thicken. , Stir constantly until the mixture becomes a sticky paste. Cook around 5 minutes.

 

Prepare Water with ice cube in a big bowl.

Next press the paste through the cendol press into ice cold water, you can also use a ladle that has holes. Leave it in the fridge to set properly.

 

Sauce recipe:

100g  organic coconut palm sugar

1 tsp corn flour

Enough water just to cover coconut palm sugar
