GRAIN-LESS OVERNIGHT VANILLA COCONUT PORRIDGE

A different way of having your overnight porridge, instead of using grains, I created this meal-plan based around a gluten-free, sugar-free (apart from fruit) trans fat free porridge. 

Using some versatile ingredients, like zucchini, chia seeds along with other added plant based foods. 

This overnight porridge is simple, with added protein from using Nuzest Clean Lean Protein.


Ingredients

PORRIDGE MIX:

 

  • 1 Medium Zucchini grated finely
  • 4 Tablespoons of Chia Seeds
  • 1 Teaspoon of flaxseed meal
  • 1 Serv of Nuzest Smooth Vanilla or Rich Chocolate Clean Lean Protein
  • 1/3 Cup chopped walnuts
  • Pinch of cinnamon
  • 1/2 Chopped fig
  • 1/3 Cup blueberries
  • 1 Teaspoon of Monk Fruit powder (Low GI sugar)
  • 250ml coconut water (fresh)

COCONUT YOGHURT:

Remove your flesh from the fresh coconut.


Method

PORRIDE INSTRUCTIONS:

Mix the above ingredients together in a mixing bowl. Once thoroughly mixed, you can set aside and make your in-between layers of coconut yoghurt.

COCONUT YOGURT INSTRUCTIONS:

Blend the coconut yogurt ingredients until smooth.

Finally you can layer your porridge with the coconut yoghurt in-between. Once your layers are done, close the jars and leave overnight in the fridge or 1 hour before serving. The extra yoghurt you can keep in the fridge.
