DRAGON FRUIT SORBET WITH VANILLA COCONUT CREAM

This is such a beautiful and refreshing ice-cream, made with dragon fruit, cashew butter and coconut cream.


Ingredients

Base Layer (Vanilla Coconut Cream)


Top Layer (Dragon Fruit Sorbet)

  • 1 Whole dragon fruit
  • 1/3 Cup Lemon juice
  • 2 Tbsp Monk Fruit Syrup

Method

Blend each layer separately. Pour the coconut vanilla cream mixture into your ice cream moulds until halfway. Pop them in the freezer for 1 hour before you pour the final top layer of dragon fruit sorbet.


Once an hour has passed, pour your dragon fruit sorbet on the top, pop back in the fridge for another hour.


Allow to thaw 5 min before serving.
