A healthier alternative to a usual store bought ice-cream, less the refined sugars and trans fats. This healthy easy no churn anytime or post workout Ice Cream is not only delicious and clean, but it is Vegan, Paleo friendly plus it is Gluten free.

Ingredients

VANILLA ICE-CREAM BASE:

  • 2 Cans of coconut milk (Chilled) 
  • 1 Cup of Nuzest Smooth Vanilla Clean Lean Protein
  • 2 Tablespoons of Monk Fruit powder (Low GI Sugar alternative)
  • 1 Teaspoon of Vanilla extract
  • Pinch of Cinnamon
  • 2 Tablespoon of smooth Macadamia nut butter

 

GREEN PISTACHIO VITALITY BASE:


Method

You will need two large deep loaf pans, place them in the freezer.

 

Using your blender or food processor, start by adding in your coconut milk and blend until smooth. Once creamy you can add your Monk fruit powder, your Nuzest Protein powder along with the vanilla extract and macadamia nut butter.


One done, transfer the Vanilla mixture into the one loaf pan and pop it back into the freezer, then you can start by making the Green Pistachio Vitality ice-cream.


Following the same process, you don’t need to wash the blender from the previous batch as the vanilla flavour will blend with the Green ice-cream.

 

Once you have a smooth creamy green pistachio vitality blend, pour that into the other deep loaf pan.

 

After 20min of it being in the freezer, use a spoon and lightly mix each blend and pop back into the freezer. This just prevents it from becoming icy. Every 20min for the first hour mix it a little. 

 

Thereafter, you can keep it in the freezer for another 40min before serving. Allow it to thaw for 5min before serving, depending on the heat in the kitchen.
