CREAMY CHIA SUMMER CRUNCH

As we are in the summer months, why not take advantage of the wonderful colours nature has to offer.

I bought some delicious red strawberries all the way from California with some juice but firm kiwi fruit and decided why not make a bit of a summer breakfast pudding.

Kiwi fruits are known to be full of nutrients like vitamin C, vitamin K, vitamin E, folate, and potassium. 

They also have a lot of antioxidants and are a good source of fiber. 

Kiwis have plenty of fiber, which is already good for digestion. They also contain a proteolytic enzyme called actinidin that can help break down protein.

Fiber is mostly found in plant foods, including vegetables, fruits, legumes, whole grains, nuts and seeds.

Vitamin C is an essential nutrient when it comes to boosting your immune system to ward off disease.

This breakfast has a rainbow of colours from nature, along with some delicious coconut cream and of course the cacao power crunch just adds to the textures that are bouncing around in your mouth.

Full of flavour, free from additives, preservatives and GMO’s.

The coconut power crunch is suited for people living a vegan, grain free, paleo, FODMAP lifestyle. 


Ingredients

Chia Layer:

Coconut cream Layer:

  • 1/2 Cup coconut cream
  • 1 Tsp vanilla extract

In-between Layers:

  • 1 Kiwi chopped
  • 2 Strawberries Chopped
  • 1/2 Pack of cacao coconut power crunch

Method

Mix all the ingredients for the chia mix together, once mixed allow to set aside while preparing the other layers.


Using a large glass, start layering in your preferred sequence.


Sprinkle with some fresh fruit and maybe a little more coconut power crunch.
