COOKIE DOUGH BROWNIE BITES

These easy to make brownie balls are not only free from refined sugars but also keto, paleo friendly.. for vegan options you can swap out the eggs.

Ingredients

Filling:

  • 3/4 Cup coconut butter
  • 1/2 Cup sugar free (keto friendly Choc chips) melted
  • 2 Tbsp coconut flour 
  • 1/2 Cup dark cacao powder 
  • 2 Servings of Nuzest Smooth Vanilla Clean Lean Protein
  • 1 Tsp Lions Mane mushroom powder 
  • 1/2 Tsp baking powder 
  • 3 Tbsp chia seed meal 
  • 3/4 Cups monk fruit powder 
  • 1 Tbsp almond butter 
  • 2 Large eggs or flax egg** (vegan option)
  • 1 Packet of crushed coconut crunch (cacao flavour)


Coating:

  • 1/2 Cup melted dark chocolate (sugar free)
  • 1/3 Cup crushed coconut crunch

Swap out the refined processed sugars with healthier swaps! Start simple but be SMART.

These easy to make brownie balls are not only free from refined sugars but also keto, paleo friendly.. for vegan options you can swap out the eggs.

You can make this your own by choosing your favourite nut or seed butter! Nuts + seeds are high in choline. Choline is responsible for the production of acetylcholine a very important neurotransmitter involved in memory, mood + muscle control.


Method

Preheat the oven to 180C/350F. Line an 8 x 8-inch pan with parchment paper and set aside. 

Add all the ingredients for the filling into the food processor and blend until a dough consistency. If it is too sticky just add a little more coconut flour.

Start rolling out your bite size balls and pop them in the oven for 25min. you don’t have to make balls you can even bake them in a tray.

Once done allow to cool as you set them aside. After cooling Pop them into the freezer for 15min before you coat them. 

Once you have coated them in dark chocolate along with sprinkling them with the added crunch from @cocobynuco you can pop them back in the freezer for 10min allowing the chocolate coating to set.

Keep in an airtight container in the freezer for up to two weeks.

NOTES**The vegan option you don’t need to bake it as you can freeze them for 1 hour before coating them with chocolate.
