These easy to make milk tart inspired dessert alternatives, might just be the favourite summer time pudding.⁠⁠

Ingredients

Filling:⁠⁠

⁠⁠

In between layer:⁠⁠

  • 2 Packets of toasted banana coconut crunch ⁠⁠
  • 1.5 Tbsp Peanut butter or almond butter⁠⁠
  • 1 Tbsp Monk Fruit Syrup⁠⁠

This is a twist on the “old school traditional Milk Tart”.⁠⁠

Free from dairy, sugars and added butter.⁠⁠

Swapping a few ingredients with those not so healthy ingredients can definitely allow you to gradually outsmart those food cravings.⁠⁠

Method

On a stove top, add the filling ingredients, ensure the mixture is well mixed and no lumps from the flour, you need to keep it on a low medium heat and constantly stir, allow it to simmer as it will thicken. Once mixture is thick, set aside and allow to cool while making the crunchy base layer.⁠⁠

Add all the crunchy in-between layered Ingredients to your food processor, once done, you can start filling your jars, first the crunch layer, followed by the reduced filling, one more layer of coconut crunch and finally a little more of the filling layer. Cover the jars and allow to set in the fridge for at least 4 hours before serving.⁠⁠

⁠⁠Before serving add a dollop of coconut cream, with a light drizzle of monk fruit syrup.
